A little research, and it looks like this is how the APs do auto-meshing, so in theory, just disabling "Meshing" under each AP's settings in the Controller, and then under Settings > System > Advanced > Wireless Networking, disable the options for "Wireless Meshing" and "New WiFi Device Auto-Link", and the hidden SSID should disappear..
